Ingredients

  • 2.4 litre water
  • 2 tablespoons barley  (you’ll find this with the dried lentils and peas in the supermarket)
  • Juice of 4 lemons
  • 1/2 cup sugar
  • few sprigs lemon balm or mint

Method

Simmer sugar and barley in water for 30 minutes. Strain and add lemon balm and lemon juice. Chill before serving.

Or try this Soothing Barley Tea

Fry 1 cup barley until aromatic and slightly brown to make tea with a few slices of fresh ginger. Drink it as a substitute for regular tea or juice, lovley for people who feel thirsty in hot weather.
