banana breadTry this delicious grain, gluten and lactose free Banana Bread .  It is great for a sweet snack that doesn’t have much sugar and a good way to use those older bananas.

Ingredients

  • ½ cup coconut flour
  • ½ cup almond flour (for a nut free version use tapioca flour)
  • 1 cup very ripe bananas mashed well (2 -3 medium bananas)
  • ½ cup of either melted coconut oil, melted butter or olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 tablespoon of either honey, maple syrup, rice malt syrup or coconut sugar
  • 4 eggs
  • ½ teaspoon vanilla extract
  • Pinch sea salt

Method

  • Preheat oven to 180 and grease a loaf pan
  • Combine coconut flour, almond flour, cinnamon, baking soda and salt and mix with fork to reduce clumps
  • In another bowl add eggs, vanilla extract, honey (or sweetener of choice) and whisk. Add mashed banana and whisk until well combined
  • Pour wet ingredients into dry ingredients and stir until thoroughly combined. Add melted butter / oil and continue stirring until well incorporated
  • Spoon batter in pan, bake for 45 – 50 or until toothpick comes out clean when pierced. (I often bake for 30mins then cover with al foil to prevent top from going too dark)
